I have 20x 2008T serial number series 6T0S with Bi-bags and machine hours ranging from 28,000 to 30,000 hours. I completed the BlueStar upgrade on them all with no problems, except for one machine... it won't let me complete the Temperature Control Calibration-Option 2, because unable to get stable temperature.
I've called tech support and they've had me replace, (I don't remember the specific order) over the last 2 to 3 weeks, I've replaced: NTC-1, NTC-2, NTC-3, Pump Heads on Deaeration and Flow motors, Sensor Board, Power Logic Board, Function Board. After each part was replaced, I'd try to calibrate the Temperature Control Calibration-Option 2, with no change.
Anyone have any suggestions please?

are you calibrating this while up in conductivity? are you using jugs or plugged into the wall port? I'd try it on jugs first and then try calibrating it with the acid and bicarb wands plugged into the front of the machine....

You mentioned that you replaced the Flow Motor pump head, but did you replace your flow motor brushes? In my experience, and from what I have heard from other biomeds, unstable temperature issues can point to an issue with the flow in the machine.
Additionally, I would check your heater bar and see if it ohms out correctly. Sometimes the simplest solution is the correct one.

When this happened to me, I had a bad bc diaphram. It didnt show up until I needed to do the 100 flow rate. My guess is the added time of volume in the chamber caused the tear to open just enough.
